Yalumba 'The Signature'
Cabernet Sauvignon-Shiraz, 2005
Australia Red
Barossa Valley 75cl
A stunning wine and multiple IWC trophy winner. It's a throwback to the wines of yesteryear. 54% Shiraz and 46% Cabernet aged in oak for 22 months. Deep in colour, lovely ripe cassis, plum, black cherry, meat, cedar, oak and spice on an inviting nose. It's dense and full with a real juicy core of red and black fruits, cedar, spice, chocolate and oak on a classic Barossa palate. The tannins are ripe and it has classic 2005 vitality with good acidity. It's got an almost velvety feel on the palate with good structure promising a long life. Quite old fashioned in it's flavour profile, and all the better for it. A delicious red for drinking now though the best is yet to come and will offer huge pleasure over the next 10+ years.
